Veggie Skewers

More Labor Day food!  Veggie Skewers are a really easy way to add some nutrition to your meal.  I love all the colors!  I just picked my favorite veggies, skewered them up and poured on a quick marinade for some extra flavor.  These skewers are so versatile.  You can change up anything you want.  You can use different vegetables and herbs and they will still turn out great.  I served these with Citrus Marinated Shrimp and Potatoes on the Grill.  You can use any kind of vegetables you want for this, but here is how I made mine:





1 Zucchini, cut into big chunks
1/2 lb button Mushrooms, whole
1 pint Cherry tomatoes, whole
1 Red onion, cut into big chunks
1/2 tsp dried Oregano
1/2 tsp dried Basil
1/2 tsp dried Thyme
2 cloves of Garlic, minced
1 tsp Salt
1/2 tsp Pepper
1 Lemon, zest and juice
1/4 cup Extra virgin Olive oil


Soak the skewers in water for 30 minutes to keep them from burning on the grill.

On each skewer, add onion, zucchini, a whole mushroom and two cherry tomatoes.  Do this twice and it should fill up the whole skewer.

Whisk together the marinade in a small bowl.  Just combine the olive oil, garlic, salt, pepper, dried herbs, lemon zest and juice.

Put all the skewers in a 9x13 pan.  Pour over the marinade and let sit for 30 minutes.

Heat the grill to medium high.  Cook the skewers until the vegetables are cooked to your liking.  I like mine with a little crunch to them so I cooked mine for about 10 minutes.
