Citrus Marinated Shrimp

Happy Labor Day!  Time to grill!  I was excited to be off work this Labor Day so we decided to grill out by the pool.  These shrimp are really easy to make and perfect for a hot summer day.  I love any food you can eat with your hands.  With these shrimp I also made Veggie Skewers and Potatoes on the Grill.  I hope everyone had a great Labor Day!





1.5 lbs of Shrimp, peeled and deveined with the tail on
 2 Lemons, zest and juice
2 Limes, zest and juice
1/3 cup Extra virgin olive oil
2 cloves of Garlic, grated or minced
2 tsp Salt
1 tsp Crushed red pepper


First things first.  Soak the skewers in water for about 30 minutes to keep them from burning on the grill.

While the skewers are soaking, prepare the marinade.  In a big bowl, whisk together the olive oil, garlic, salt, crushed red, lemon and lime juice and zest.

Add the shrimp to the marinade, toss everything around, and let it sit in the refrigerator for 15 minutes.

After 15 minutes, skewer the shrimp.  I put 6 on each skewer but just put however many fit!  Make sure to put the skewer through the body of the shrimp and through the tail.  This will make them more secure and less likely to spin around on the skewer which can be really annoying!

Put the skewered shrimp in a 9x13 pan and pour the rest of the marinade over them.

Fire up the grill!  Set it to medium high.  When the grill is hot enough, grill the shrimp skewers for about 2-3 minutes on each side.  They won't take long at all.  They are done when they are firm to the touch.

Serve with some extra wedges of lemon and lime.  Enjoy!
