The Perfect Hard Boiled Egg

Hard boiled eggs can be tricky.  They are actually very simple, but there are so many methods out there for getting the perfect hard boiled egg, that people tend to get overwhelmed and make it harder than it seems.  This is my method for getting perfect hard boiled eggs with a bright yellow and firm yolk.  No green halos here!

 




The very first thing you want to do is grab a medium sized pot and fill it with cold water.  Put the eggs in the pot and turn the heat to medium.

Let the eggs heat gradually.  Putting them in too hot of water right away can cause them to crack. Yuck.

 

Once some bubbles start to form, turn the heat to high.

 

When the water is juuuust at the boiling point, cover the pot, TURN OFF THE HEAT, and let stand in the hot water for 7 minutes.  No more!

After 7 minutes, drain the eggs and rinse them in cold water until they are cool enough to handle.

 



Carefully tap the egg on the counter to crack the shell.  Roll it slightly until all of the shell is cracked.  This is an important step, it makes peeling so much easier.



After they are all nice and cracked, carefully peel them under cool running water.



Place them on paper towels to drain well.  I hate when water gets on the plate.  Gross.


Cut them in half and serve! I like mine with salt, pepper and a little sriracha.
