Herb Roasted Baby Potatoes

This is great recipe for a quick side dish.  I love potatoes because they are so versatile.  My favorite way to have them is roasted in the oven with a lot of herbs.  The combinations are endless.  This is a recipe I came up with a few days ago using herbs from my garden.  I threw in some onions and garlic for extra flavor.  It's really easy and really tasty!  Potatoes are awesome because they are a natural starch.  It makes me feel healthier to eat some potatoes instead of pasta or bread.  Here's how to make them:




1.5 lb Dutch yellow baby potatoes, whole and skin left on
1 small Onion, large dice
5 Garlic gloves, smashed
1 tsp Rosemary, minced
1 tsp Thyme, stripped off the stem
Crushed red pepper flakes
Salt
Extra virgin olive oil


Preheat the oven to 450 degrees.

On a baking sheet, toss everything together with enough olive oil to coat everything generously.  Season to your liking with salt and crushed red pepper.

Roast in the oven for about 25 minutes.  Shake the pan to move everything around once during the roasting process.  Start checking after 20 minutes with a fork to see if the potatoes are tender.

When the potatoes are tender and the skin is a little crispy they are done!

Taste for seasoning and sprinkle on a little more salt if you think they need it.  Pretty easy, right?  I served these with Country Green Beans.  Enjoy!
