Sushi Bowls with Marinated Tuna

Delicious, marinated tuna on top of a bed of sticky rice.  Sushi bowls!  So easy to make with barely any cooking required.  Here's how to make them:





For the marinated tuna:

1 lb. ahi tuna, sliced or cubed
1/3 cup soy sauce
1 tbsp sesame oil
2 tbsp rice wine vinegar
1 garlic clove, minced
1 small red onion, sliced thin
1 tbsp fresh ginger, minced or grated
1 tbsp chili paste or sriracha

In a bowl, whisk together the soy sauce, sesame oil, rice wine vinegar and chili paste.  Stir in the garlic, onion, and ginger.  Add the sliced tuna and let sit in the refrigerator for 1 hour, tossing occasionally.


For the sticky rice:

2 cups sushi rice
4 cups water
2 tbsp rice wine vinegar
1 tbsp sugar
Pinch of salt

Rinse the rice under cold water until the water runs clear.  Combine rice and water in a pan and bring to a boil.  Reduce the heat to low, cover and let simmer for 20 minutes.  In a small bowl, combine the rice wine vinegar, salt and sugar.  Microwave for 30 seconds until the sugar is dissolved.  Stir into the cooked rice and let the rice cool.

Additional toppings:
Avocado
Scallion
Cucumber
Sesame seeds

To assemble, pile some rice into a bowl.  Top with the marinated tuna and your choice of toppings.  Sprinkle with toasted sesame seeds.  Yum!
