Chicken Parmesan Subs

Happy Birthday, Drew!  He loves Chicken Parmesan but I think it can get a little boring sometimes!  I wanted to make him his favorite food for his birthday but put my own twist on it.  We're both big fans of a good sub, so I decided on Chicken Parmesan Subs.  This recipe serves 2-4.  Here's how to make it:





What you'll need:


1 loaf French bread
8 oz. fresh mozzarella cheese, sliced
4 oz. grated parmesan cheese
1 lb. chicken cutlets
3 eggs
1/2 cup flour
1 1/2 cups panko breadcrumbs
Salt, as needed
Extra virgin olive oil, as needed 
Garlic powder, oregano, cayenne, optional



Preheat the oven to 200 degrees.

Prepare the Quick Tomato Sauce.

Lay out three shallow dishes.  In one, add the eggs and beat lightly.  In another, add the flour and a pinch of salt.  In the third, add the breadcrumbs, a pinch of salt, and any other seasonings you may want (oregano, garlic powder, cayenne, etc.)

Heat a large skillet over medium high heat.  Coat the bottom generously with olive oil.

Season the chicken cutlets with salt.  Dredge the chicken in the flour, then the egg, then the breadcrumbs.

Cook until golden brown, about 3 minutes per side.  Place the cooked chicken in the warm oven while you prepare the subs.

Cut the loaf of bread in half lengthwise without cutting all the way through.  Press it to spread it out and lay slices of mozzarella along the bottom.  Spoon over some tomato sauce.  Slice the chicken and pile it on.  Sprinkle over some Parmesan cheese and spoon over some more tomato sauce.  Close the sandwich and wrap tightly in aluminum foil.

Heat the oven to 425 degrees.  Place the wrapped sandwich right on the oven rack and bake for 12 minutes.

Cut into fourths and serve hot!
