Roasted garlic is good in so many different recipes. I think the best way to use it is in a salad dressing. It keeps the garlic pure, and it isn't masked by other flavors. Here is my recipe for a Roasted Garlic Vinaigrette.

What you'll need:
2 bulbs, Oven Roasted Garlic
1 tsp Salt
Pinch black pepper
Pinch crushed red pepper flakes
1/4 - 1/2 cups Extra virgin olive oil
2 tbsp Red wine vinegar
1 tbsp Honey
Juice of 1 lemon
Using a mortar and pestle, drop in the roasted garlic cloves, salt and pepper. If you don't have a mortar and pestle you can use a food processor or a blender. Chopping the garlic finely by hand works too.

Mash up the garlic as much as you can.

Add in the honey and mix.

Add the lemon and mix. Make sure you squeeze the lemon into your hand. The seeds will stay in your hand and the juice will fall through into the mortar.

Transfer everything into a medium sized bowl. Add the red wine vinegar and whisk.

Slowly add in the olive oil little by little. Taste as you go until it is to your liking. I ended up using about 1/3 of a cup of oil.

Season with crushed red and more salt if needed.
