Nutella Palmiers

Palmiers are a really easy cookie to make with very few ingredients.  You can easily switch around the ingredients to make any variety, even savory palmiers.  I made these for our Valentine's Day dessert along with some Red Velvet Cookies with Cream Cheese Frosting that I made earlier in the week, hehe.  Palmiers are supposed to look like elephant ears, and they do!  Here's how to make them:







What you'll need:

1 sheet of puff pastry
1/4 cup brown sugar
1/2 tsp cinnamon
1/2 tsp instant espresso powder
1/4 tsp salt
6 tbsp Nutella




Preheat the oven to 400 degrees.

In a small bowl, mix together the sugar, cinnamon, espresso powder and salt.

Sprinkle some of the mixture onto a cutting board.  Lay the chilled piece of puff pastry on top and using a rolling pin (or a wine bottle, haha) roll out the pastry a little, making sure the sugar mixture presses into the dough. 

Sprinkle the rest of the sugar mixture onto the dough.  Roll again, pressing the sugar mixture into the dough.  Spread the Nutella evenly over the pastry.

Roll the top half of the dough tightly to the center, then roll up the bottom until it meets the top half in the middle of the dough.

Chill in the refrigerator about 30 minutes until the dough has firmed back up.  You want the dough to be really cold when it goes into the oven.  Also chilling it makes it easier to cut.

Line a baking sheet with parchment paper.  Slice the palmiers into 1/8 to 1/4 of an inch pieces.  Lay on the baking sheet and bake until golden brown and puffed, 12-15 minutes.  Watch them carefully, you don't want them to burn.

All done! Enjoy warm or at room temperature.
