Tzatziki sauce is a Greek condiment traditionally served with meats but it is also served as a dip. It is very light and refreshing. It's made with Greek yogurt, which is very low in fat and calories, and lots of fresh cucumber. It's a great dip to serve if you're looking for a healthy option for your guests. It's pretty easy to make!
1 seedless Cucumber, finely chopped or grated
3 cloves of Garlic, grated
21 oz Greek yogurt (I used 3 7 oz. containers of Fage)
2 Lemons, juice and zest
1 tbsp Dill, picked from the stem
Salt, to taste
Pepper, to taste
I served mine with pretzels, pita chips and bagel thins.
Place the chopped or grated cucumber in a colander and sprinkle it with salt. Place the colander over a bowl and let it sit in the refrigerator for a couple of hours so some water can drain out.
Meanwhile, in a large bowl combine the yogurt, garlic, lemon zest and juice, dill, salt and pepper. Mix everything well.
After some water has been extracted from the cucumber, add the cucumber to the yogurt mixture. Mix well and refrigerate until it's chilled.
