Easy and refreshing Asian style cucumber salad. It takes no time to put together and is so delicious!
What you'll need:
2 large English cucumbers, sliced thin, seeds removed
1 red onion, sliced thin
2 cloves of garlic, minced
1/3 cup soy sauce
2 tbsp sesame oil
3 tbsp rice wine vinegar
1 tbsp fresh ginger, minced or grated
Salt
Additional toppings:
Scallions
Lime juice
Mung beans
Sesame seeds
Cut the cucumbers in half lengthwise and scrap out the seeds. Slice thin and place in a large bowl. Toss with 1 tbsp of salt. Place in a colander over a bowl and let sit in the refrigerator for a few hours. This will remove any excess water. Rinse the cucumbers and pat dry on paper towels. Return to the large bowl.
In a small bowl whisk together the soy sauce, sesame oil, rice wine vinegar, then stir in the onion, garlic and ginger. Add to the cucumbers and toss all together.
Let it sit in the refrigerator for 1 hour, tossing occasionally.
Serve in bowls with chopsticks with your choice of toppings.
